For many years the Bulgarian States were controlled as part of the Ottoman Empire. By the 1870s they were being run as a principality. Bulgaria finally became a self ruling state in 1908 and then a communist country after WWII.

Eating in Bulgaria was quite basic at one time and meals tended to consist of what was available but now there is much more choice. Stews are still very popular and much of the food is grilled rather than fried. Bulgarian dishes often contain pork but there are many foreign dishes such as Greek and Oriental becoming part of the menus. With cheese and salads there is a good choice and Bulgarian wine such as Mavrud is exported worldwide.
